Appetizers: 6-8 per person/hr | Buffet: 1 lb protein + 6 oz starch + 4 oz vegetable pp | Drinks: 2 per hour

Industry standard catering portions. Buffet = 25% more food than plated. Always prepare 10-15% extra.
