Chocolate poisoning in dogs is methylxanthine poisoning. Theobromine, or 3,7-dimethylxanthine, comes from the seeds of Theobroma cacao, with a smaller contribution from caffeine at a tenth the concentration. Both antagonize adenosine receptors, inhibit phosphodiesterases so cyclic AMP accumulates, raise circulating catecholamines and promote calcium release in muscle. Clinically that produces vomiting and diarrhea, restlessness, polyuria, tachycardia, tremors, arrhythmias and, at high dose, seizures. Dogs are vulnerable for pharmacokinetic reasons: the reported plasma half-life of theobromine in dogs is about 17 to 18 hours against 2 to 3 hours in humans, so it accumulates. Risk therefore depends on dose, so the calculation multiplies mass consumed by a product-specific theobromine concentration and divides by body weight in kilograms. The bands in common veterinary use are: under 20 mg/kg minimal effect, 20 to 40 mg/kg gastrointestinal upset, 40 to 60 mg/kg cardiac signs and tremor, and above 60 mg/kg seizures with potentially fatal outcome; lethal doses are quoted near 100 to 200 mg/kg. Representative concentrations per ounce are roughly 737 mg for cocoa powder, 393 mg for unsweetened baking chocolate, 130 mg for dark or semisweet, 58 mg for milk and 0.25 mg for white chocolate. Actual products vary widely, since cacao percentage changes theobromine content substantially, so an estimate is a lower bound when the exact item is unknown. White chocolate rarely causes methylxanthine toxicity but its fat load can trigger pancreatitis, and confectionery containing xylitol or raisins presents separate hazards. Signs usually begin within 6 to 12 hours; any suspected ingestion warrants a call to a veterinarian or poison control service.

Theobromine was first isolated from cacao beans in 1841 by the Russian chemist Alexander Woskresensky. Its structure and its close relationship to caffeine were established later in the 19th century through the purine chemistry of Hermann Emil Fischer, who received the Nobel Prize in Chemistry in 1902 for work on sugars and purines. For most of the following century the compound was of interest chiefly in human medicine as a diuretic and vasodilator, and its danger to dogs attracted little formal attention. Chocolate toxicosis emerged as a recognized clinical entity as mass-market confectionery spread and dogs increasingly lived indoors with access to household food. Veterinary case reports accumulated from the middle of the 20th century, but it was the creation of dedicated animal poison control services that put reliable numbers on the problem. The service that became the ASPCA Animal Poison Control Center was established in 1978 at the University of Illinois, the first of its kind for animals, and its accumulated case records underpin the dose bands still used in triage today. Chocolate has since ranked consistently among the most frequent call categories to those centers, with pronounced seasonal peaks around Halloween, Christmas and Easter.
