An air fryer is a compact, high-velocity convection oven. A heating element sits directly above a perforated basket and a fan drives air past the food far faster than the gentle currents inside a conventional oven. That speed matters more than the number on the dial: fast-moving air strips away the thin, humid boundary layer that clings to every food surface, which raises the effective rate of heat transfer even though the air itself is cooler. Surfaces dry out and reach Maillard browning temperatures sooner, which is why the oven-to-air-fryer conversion used here subtracts 25 degrees F and trims cooking time by about 20 percent.
The food-type adjustments layered on top of that base conversion track how much water each load has to shed. Frozen items carry surface ice that absorbs latent heat before any browning can begin, so they get a small bump in both temperature and time. Vegetables are mostly water held in thin-walled cells; they crisp quickly and scorch just as quickly, so their time comes down. Meat and poultry carry real thermal mass, so time goes up and doneness has to be confirmed with a probe thermometer rather than the timer.
