Kitchen conversion is really two separate problems wearing one name. Volume units form a closed ratio system anchored on the US customary cup of 236.588 milliliters, which is exactly 16 tablespoons, 48 teaspoons and 8 US fluid ounces; the US gallon of 3,785.41 milliliters, the quart, the pint and the fluid ounce all descend from the same 231 cubic inch definition. Mass units form a second closed system anchored on the avoirdupois ounce of 28.3495 grams and the pound of 453.592 grams. Converting inside either system is exact, which is why this tool multiplies by a from-factor and divides by a to-factor. Crossing between them is not exact, because it requires the density of the specific ingredient. That distinction causes most real errors. One US cup of water weighs about 236 grams, but a cup of all-purpose flour is anywhere from 120 to 145 grams depending on whether it was scooped or spooned and levelled, a spread of nearly 20 percent that ruins bread and pastry ratios. A fluid ounce and a weight ounce are also different quantities that happen to share a name: 29.574 milliliters versus 28.3495 grams. Regional cup sizes differ too, with the metric cup used in Australia at 250 milliliters and the US legal cup used on nutrition labels at 240 milliliters. Temperature is handled by its own affine formula rather than a ratio, since the Fahrenheit and Celsius scales have different zero points as well as different degree sizes.

Cooking by weight is older than cooking by volume; apothecary and baker scales predate standardized cups by centuries, and European recipes have generally stayed gravimetric. The volumetric habit is largely an American invention, credited to Fannie Merritt Farmer, whose Boston Cooking-School Cook Book of 1896 insisted on level measurements with standardized cups and spoons in place of instructions such as a lump the size of an egg or butter the size of a walnut. Standardized measuring vessels were cheap and required no scale, so the convention spread quickly through American home kitchens and the recipe literature that followed. The underlying units have a longer paper trail. The US customary gallon derives from the English wine gallon of 231 cubic inches, fixed by statute in 1707 under Queen Anne, while Britain went a different way in the Weights and Measures Act of 1824, defining an imperial gallon based on ten pounds of water - which is why an imperial pint is 568 milliliters and a US pint only 473. The Mendenhall Order of 1893 redefined US customary units in terms of the metric standards, making today's exact factors possible. The two temperature scales came from Daniel Gabriel Fahrenheit, who published his in 1724, and Anders Celsius, who proposed a hundred-degree water scale in 1742 that was later inverted to the modern form.
